Cupcakes make the perfect lunch box treat. Compact enough to make them easy to bring to college with you, sale or even break out in the middle of a lecture if you can feel your tummy rumbling, nurse they make for perfect baking !
Simple to concoct in any flavour, we chose lemon drizzle this week for sweet midweek punch.

Ingredients

250 grams of softened butter
400 grams of sugar
3 eggs, lightly beaten
250 grams of self raising flour
Zest and juice 3 lemons.

Steps

1) Heat your oven to 160C
2) Make sure to line a muffin tin with 12 muffin cases.
3) Whisk together the butter, 250g of sugar, flour, eggs and the zest of 2 lemons and juice from 1 lemon until just combined nicely.
4) Fill the cases and then bake on a middle shelf for 30 minutes.
5)Ensure to cool the cupcakes for 10 minutes and then poke each cupcake a few times with a skewer.
Pour remaining lemon juice over remaining 150g sugar and zest 1 lemon, and immediately spoon over the cakes.
6) Leave to cool.
